2 bags (peck) apples - Jonathan, Gala, Pink Lady, etc.

1. Prepare 5-6 pint jars for hot water bath. Place canning lids in a small pan with very warm water. Prepare large hot water bath pot with enough water to be 1-2 inches above the top of jars.
2. Peel, core and slice apples. Add apple slices to heavy bottom pot and add 1 full cup of water. Bring apples to boil and add additional water to keep from sticking. Add a handful of cinnamon hearts to taste. Adjust water and cinnamon hearts to preferred texture and taste.
3. Put applesauce in prepared jars, wipe jar rims and add warmed lids and rings. Put in hot water bath and boil gently for 15 minutes. Once time expires, turn off heat, remove the lid and allow to sit in pot for 5 minutes before removing to a wire rack. Listen for the lids to pop indicating a seal. If any jars fail to seal, put applesauce in refrigerator to eat within a week.

Grammy Day used red cinnamon hearts to flavor her applesauce. The hearts make the applesauce a pink color and additional sugar or cinnamon are not needed. You can also freeze the applesauce instead of canning and you can use an immersion blender to puree applesauce.
