2 ripe bananas, mashed
1 cup oatmeal
2 TBS almond butter (can substitute peanut butter)
2 TBS honey
1 tsp vanilla
1 tsp cinnamon
1/4 cup craisins (dried cranberries)
1/4 cup coconut flakes
1/4 cup chopped fresh dates
1/4 cup pecans or walnuts, chopped Pinch of salt

Directions:

Heat oven to 350. Line a baking sheet with a Silpat or parchment paper. In a bowl, combine bananas, oats, cinnamon, vanilla, and salt. Mix until combined. Add almond butter and honey; stir. Fold in craisins, coconut, dates, and nuts. Using a two-ounce cookie scoop, place six dough balls on the baking sheet. Flatten slightly with a fork. Bake for 12 minutes. Repeat until the dough is gone.
