7 cups crushed figs
6 cups sugar
2 large boxes strawberry Jello
2 boxes Sure-Jell

Puree figs in a food processor before measuring the 7 cups. Prepare the jars by washing and drying in the dish washer. They need to be really clean and hot. Place the jar rings and lids into a small saucepan filled with water and heat thoroughly. These have to be sterilized before adding to the filled jars. Prepare the canner by adding water and bringing it to a boil. Combine the figs, sugar, and Jello and boil 10 minutes. Add 2 boxes Sure-Jell. Boil for 5 minutes. Pack into sterilized jars. I use a funnel when pouring the jam into the jars to help keep the jars clean. Leave a little space at the top of the jar. Using tongs, place a lid and a ring onto each jar. Screw the lid on. Do not screw it on too tightly. Place the filled jars into the metal jar holder and lower into the boiling water. The jars need to be fully submerged. Process according to the time indicated on the Sure-Jell box. This means just let them boil in the hot water for the correct amount of time. When finished processing, lift the jar holder from the water. Set it, with the jars, onto a towel on the counter. Listen for the jars to make a popping sound. This means that they have sealed properly. Makes 12 -½ cup jars.

It is really important to keep everything clean and sterilized when canning. Read the instructions on the Sure-Jell box for timing. Make sure to use ripe figs. They should be really soft. Sometimes I store them in the refrigerator for several days before making the jam.
