SAUCE
• 2 pounds ground, seasoned sausage
• 3 cloves fresh garlic
• 2 (28 oz.) cans crushed tomatoes
• 2 (28 oz.) cans tomato puree
• 2 basil leaves
• ¼ cup chopped parsley
• Salt and pepper to taste
• Hot crushed red pepper
• Spaghetti cheese
• 2 pounds fresh mushrooms sliced

POLENTA
• 3 cups yellow cornmeal
• 2 tsp. salt
• 3 cups cold water
• 9 cups boiling water

Directions:
Directions:
Brown sausage and garlic. Add tomatoes, basil, parsley, salt, pepper and hot pepper flakes (optional). Simmer for 1 ½ hours. Add mushrooms (do not sauté) and simmer another ½ hour. Mix cornmeal, salt, and cold water together. Pour this mixture into the boiling water, stirring constantly. Reduce heat. Cover. Continue cooking over low heat, stirring occasionally until very thick. Pour hot polenta onto a large platter. Pour sauce over polenta. Sprinkle with spaghetti cheese and black pepper. Serve with crushed red pepper and additional sauce. Serves 8.
