• 1 young green pumpkin (10-12 inches)
• 2 potatoes, medium, diced
• 2 Green peppers, sliced
• 1 Onion, medium, sliced
• 2 Tomatoes, fresh/ripe, cut in large pieces
• Hot red pepper flakes, optional
• Oil for sautéing
• Salt and pepper to taste

Skin pumpkin and sauté quickly (not done). Sauté potatoes until brown. Sauté peppers and onions quickly (not done). Put all vegetables together in a large pot. Add tomatoes. Simmer 1 hour until tender. Season (salt, pepper, red pepper) to taste.
