1 pound chicken (cut into small pieces) I just use rotisserie
6 tablespoons butter
3 stalks celery chopped
1/2 small onion chopped
1 clove garlic
1/2 cup flour
4 cups chicken broth
1/4 teaspoon salt
1/2 cup shredded carrot
1 box Uncle Ben's Wild Rice, cooked according to package
1 cup half and half cream
2 tablespoons sherry

Directions:
Directions:
Cook rice and set aside.
Cook chicken and set aside.
Melt butter in saucepan. Saute onion, garlic and celery until tender.
Blend in flour and then gradually stir in chicken broth.
Stir in salt, carrots, and cooked rice.
Reduce heat and simmer for 5 minutes.
Blend in half and half cream and sherry. Simmer for additional 5-10 minutes.
