½ C packed brown sugar
¼ C unsweetened applesauce
1 large egg
2 Tbsp canola Oil
2 tsp vanilla extract
1 C powdered peanut butter
½ C all purpose flour
¾ tsp baking soda
½ tsp salt
½ C semisweet chocolate chips, divided

1. Preheat a gas grill to medium, or prepare a medium fire in a charcoal grill. Coat a 10 inch cast-iron skillet with cooking spray.
2. Using an electric mixer on medium speed, in a large bowl, beat the sugar, applesauce, egg, oil, and vanilla until well blended. In a medium bowl, whisk the powdered peanut butter, flour, baking soda, and salt. Add the dry ingredients to the wet ingredients and beat at low speed just until combined. Stir in 6 Tbsp chocolate chips. Spread the batter into the prepared skillet. Sprinkle the remaining 2 Tbsp chocolate chips over the top.
3. Transfer the skillet to the grill. Close the lid and cook until the cookie is set, 13 to 15 minutes. Cut into 12 wedges.
