1 lb seedless raisins
3 cups water
1-1/2 cups sugar
1 cup shortening
2 eggs, beaten
4 cups flour
1 teaspoon soda
1/4 teaspoon salt
2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon cloves
2 Tablespoons cocoa powder
3/4 cup black coffee
1 teaspoon real vanilla
1 cup chopped nuts
2 cups fruit slice candy, cut into small pieces (no black)
1 container red or green candied cherries, cut in half

Pre-preparation:
1. Place about 1/2 cup of flour in small bowl and dust kitchen scissor blades with flour. Cut each fruit candy slice into 3 small pieces and place in bowl with flour. You will need to dip scissor blades in flour between each candy slice in order to easily cut the candy. Once each piece of candy is cut, set bowl aside.
2. In another small bowl, cut each candied cherry into half and set aside.
3. Rough chop walnuts and set aside.
To prepare cake:
1. Combine raisins, water and sugar in pan and boil for 20 minutes. Add shortening and allow to cool completely.
2. In large mixing bowl, combine raisin mixture with beaten egg. Sift dry ingredients together and add to raising mixture. Add cocoa powder and coffee. Stir in vanilla and nuts. Add cut candy slices and cherries and stir all together. Add additional water so cake mixture is consistency of prepared boxed cake mix.
3. Grease and flour three 5"x9"x4" loaf pans and place a piece of parchment paper in the bottom of the pan. Using a ladle, fill each prepared pan with the cake mixture and bake at 350º for 60-75 minutes. Cake will be done when toothpick is inserted and comes out clean.
4. Insert a kitchen knife along each edge of pan to loosen but allow to completely cool before removing from pan otherwise the cake make break. Once completely cooled, wrap in foil and put in zip lock bag. Wrapped cake with last about 2 weeks stored in zip lock bag.

Grandma "2" made these cakes every Christmas. It would take her days to prepare the cakes by the time she cut the candy, nuts, and cherries. THIS IS NOT A FRUIT CAKE but instead we call it a "Christmas gum drop" cake. My grandma put all her love and energy, even at the age of 85 years old, to make and mail these cakes for Christmas. Grandma Betty and I continued the tradition after Grandma was unable to and now I make them to give away. Uncle Chuck's Christmas would not be the same so he gets one each year. Remember what I said, Grandma "2" but all her love into these cakes and that is the one missing ingredient.
