Ingredients: Cake: 3 cups grated carrots 2 cups sugar 1 1/2 cups oil 4 eggs 2 cups flour 2 tsp baking soda 3 tsp cinnamon 2 tsp vanilla 1 tsp sea salt
Icing: Icing: 1 lb box confectioner’s sugar 1 8 oz cream cheese softened 1 cube softened butter 2 tsp vanilla

Directions:Instructions: Preheat Oven to 375 Put each ingredient on top of each other in large bowl without stirring in between. Stir everything together with wooden spoon until mixture is moist. Do not over stir. Place in cupcake papers and/or buttered/floured cake tin as desired
Bake 40-50 minutes (test with toothpick – will come out clean when done)
Icing: Use stand mixer and/or hand mixer until smooth – use knife once cupcake or cake is cool (if you want icing to look decorative add 1 tbs powdered egg white and/or Wilton’s Meringue Powder to stiffen so that you can pipe on icing) |
