1/2 cup butter
1 cup sugar
1 egg
1 egg yolk
1 ½ cups flour
1 tsp baking powder
1/2 tsp salt
1/4 cup lime juice
1 tsp grated lime rind
1/2 tsp grated lemon rind

Directions:
In a small bowl work 1 stick or 1/2 cup butter, softened, until creamy. Gradually work in 1 cup sugar until the mixture is smooth and beat in thoroughly 1 egg and 1 egg yolk. Sift together flour, baking powder and salt and stir it into the batter mixture alternately with lime juice, beating hard after each addition. Mix in grated lime rind and grated lemon rind. Drop the batter from a teaspoon onto an oiled cookie sheet leaving room for the cookies to spread. Bake at 350º for 8-10 minutes or until the edges are golden brown. Transfer cookies to wire rack and while they are still warm sprinkle them with sugar. Makes about 80 small cookies.
