3/4 c. milk
3/4 c. flour
1 T. sugar
1/4 t. salt
2 T. butter
APPLE TOPPING:
5 lg. cooking apples, pared, cored and sliced
2/3 c. sugar
1/4 t. cinnamon
1/8 t. nutmeg
1/3 c. butter
1 T. lemon juice
1 t. grated lemon rind (optional)

Directions:
Directions:
Mix eggs, milk, flour, 1 T. sugar, and salt in medium bowl. Beat slighlty. Batter will be thin and slightly lumpy. Melt 2 T butter in 10" heavy skillet in the oven (I use cast-iron). When skillet is hot and butter has melted (don't let butter burn), tilt skillet to coat sides, then pour mixture into skillet. Bake in preheated 425 degree F. oven for 20 minutes or until set and crust is dark brown. (Do NOT open oven door during baking.) The pancake will raise about 5-6". Plan to serve immediately because the pancake will start to fall as soon as you remove it from the oven. This is normal.
You can service the pancake with the following Apple Topping, or with just butter, powdered sugar and lemon juice. Both are equally delicious!
APPLE TOPPING: Mix apples, 2/3 c. sugar, cinnamon and nutmeg. Heat 1/3 c. butter, lemon juice and rind in large skillet until bubbly. Saute apples until tender, 3-5 minutes.

This is like the Dutch Pannekoekens you use to be able to order at Pannekoeken restaurants, until they closed. We enjoy this for either breakfast or evening meal. Oh so good!
