This recipe for Classic Quiche, by Elaine Dack, is from Seasoned with LOVE,

1 9" pastry sheel 12 slices bacon, cooked crisp and crumbled 1 c. shredded Monterray Jack Cheese 4-5 eggs, slightly beaten 3/4 t. salt ( optional) 1/8 t. pepper 2 cups 1/2 & 1/2 pinch nutmeg
Put bacon in pie shell, sprinkle cheese on bacon. Combine eggs and remaining ingredients, and pour over bacon and cheese. Bake 425 degrees for 15 minutes. Reduce to 300 degrees and bake 30-40 minutes more, until knife comes out clean.
Can be made a day ahead and reheated in the microwave. DELICIOUS!
