Cookie:
1 cup margarine
⅓ cup thick cream
2 cups flour
Sugar, for dipping

Icing:
¼ cup margarine
1 egg yolk
1 tsp vanilla
¾ cup icing sugar
food coloring (optional)

Directions:
Directions:
Mix the margarine, cream and flour as for pie; chill the dough for a few hours or over night, covered.

Roll out the dough very thin (⅛ inch) on a lightly floured surface and cut with a small cookie cutter. Dip each cookie in a bowl of white sugar and then place on a cookie sheet. Prick each cookie with a fork.

Bake at 375º F only until a very light brown.

Beat icing ingredients together and spread between cooled cookies.
