1 tablespoon olive oil, divided
6 cloves garlic, finely chopped
2 cups kale leaves, stemmed and thinly sliced

1⅓ cup cooked farro
2 ounces Parmesan, grated
2 large eggs

Directions:
In a large skillet over medium heat, heat 1/2 tablespoon olive oil. Add garlic and cook until fragrant and starting to brown, about a minute. Add kale. Season with salt and pepper. Cook, stirring, until kale is soft and wilted, about 5 minutes. Add farro and Parmesan and cook, stirring, until heated through. Reduce heat to low.

In a large nonstick skillet over medium-low heat, heat remaining 1 tsp olive oil. Crack egg into pan and cook until white is set but yolk is still runny, about 4 minutes.

Top kale-farro mixture with egg.
