3 cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon baking soda
¾ teaspoon sea salt
8 oz butter softened (1 cup 2 full sticks)
¼ cup cream cheese softened
1¼ cups granulated sugar
1 large egg
3 teaspoons vanilla extract
¼ teaspoon almond extract
1½ cups rainbow sprinkles

Preheat oven to 375ºF. Line two baking sheets with parchment paper. In a large mixing bowl add the flour, baking power, baking soda and salt. Whisk to combine. In a large mixing bowl add cream cheese, butter and sugar. Mix until combined and fluffy approximately 3 minutes. Add the egg, vanilla and almond extracts. Mix again. Add the flour mixture and stir into the sugar/butter. Do not overmix.
Cover the bowl and chill for 20-30 minutes. Scoop dough into tiny balls, about 1½ tablespoonfuls. Rill the dough in the palm of you hand and dip into the bowl of sprinkles. Try to only get the top and sides, not the bottom of the cookie. If the dough is too cold, the sprinkles won't stick. Warm dough in your hand. Place sprinkle covered balls onto cookie sheet. Gently press the cookie with the bottom of a glass to flatten slightly. Bake for 8-10 minutes. Cookies may look undercooked, that is ok. Remove from the oven and allow to cool on the sheet for a few minutes before transferring to a cooling rack. Store in an airtight container.
