4 Cornish hens
6 garlic cloves, peeled and minced
2 T. oregano
Salt and pepper, to taste
1/2 c. wine vinegar
1/4 c. olive oil
1/2 c. pitted prunes
1/2 c. dried apricots
1/2 c. green olives, pitted
4 bay leaves
1/2 c. brown sugar
1/2 c. dry white wine
2 T. chopped parsley

Directions:
Directions:
Place Cornish hens in a Dutch oven; combine remaining ingredients except for brown sugar and wine and add to the roasting pan. Mix the brown sugar and wine and pour over the hens. Bake at 350 F. for 1-1/2 hours. Baste birds every 15 minutes.
