2-1/2 lb. beef bottom round roast
2 T. oil
1 c. beef broth
2 medium onions, sliced and separated into rings
1/2 tsp. paprika
1/4 tsp. paprika
1/4 tsp. gound allspice
1/8 tsp. ground red pepper
1 lb. sweet potatoes, peeled and cut into 1" cubes
1 c. dry pitted prunes
1 (6 oz.) pkg. dried apricots

Directions:
Directions:
In a Dutch oven, add oil and brown roast on both sides; drain fat. Add beef broth, onions, paprika, allspice and red pepper and bring to a boil. Reduce heat and simmer, covered, for 1-1/4 hour. Add potatoes, prunes and apricots. Cover and cook for 30-45 minutes more or until meat and potatoes are tender.
