2 egg whites
1/2 cup water
1/3 cup light corn syrup
2 cups sugar
1/4 teaspoon salt
1 teaspoon vanilla
1/2 cup chopped nuts
a few drops food coloring

Directions:
Directions:
1. Line large cookie sheet with waxed paper.

3. In 3-quart saucepan, mix water, corn syrup, sugar and salt. Cook over medium heat, stirring constantly, until sugar is dissolved. Without stirring, cook 8 to 10 minutes or until syrup reaches 250 degrees on candy thermometer.

4. When syrup is 250 degrees, continue beating egg whites on high speed while slowly pouring syrup into egg whites. Beat 2 to 3 minutes or until mixture hold a soft peak and does not flatten when dropped from a spoon.

5. Fold in vanilla and nuts. Add food coloring to desired color then quickly spoon mixture by rounded teaspoons onto cookie sheet. Let stand about 30 minutes or until set.

I loved Mom's Divinity. It was very difficult to make as I remember and if you made one mistake, it would turn out more like the consistency of cake batter than soft, chewy, melt in your mouth candy.

Secretly, though, sometimes I hoped that the batch would fail; because I then got to eat that luscious, runny candy right out of the bowl and scrape it clean! 😜
