1 C Cap'n Crunch Berry Cereal crushed
1 C non-crushed Cap'n Crunch Berry Cereal
2 eggs
2 C all purpose flour
½ tsp baking soda
1 C light brown sugar
½ C granulated sugar
½ tsp salt
1 T vanilla
1 melted stick butter

Directions:
Directions:
Heat oven to 325º. In a medium bowl combine flour baking soda and salt. Whisk until fully combine and aerate. Melt butter in microwave safe bowl, In a large bowl using an electric mixer cream together butter, brown sugar and white sugar. Beat in the vanilla and eggs. Continue beating until the mixture is light and creamy. Slowly add in the dry ingredients and continue mixing.
In a small bowl use a potato masher and crush 1 C of the Cap'n Crunch cereal. If you do not have a potato masher crush in a Ziploc bag. Add the crushed cereal to the mixture and continue mixing. Last add the uncrushed cereal and mix by hand. Place 1" balls on a cookie sheet lined with parchment paper. Bake 8-10 minutes until edges are light brown. Remove from cookie sheet and place on a cooling rack.
