Fried Rice - Grandma O'Malley's Recipe

Ingredients: 5 -6 cups cooked white rice, cooled carrots 3 peeled and sliced (like matchsticks) ½ onion diced 2 stalks celery 2 tablespoons parsley 3 eggs 6 strips bacon 1 chicken breast murin to saute with salt and pepper

Directions:Cook the rice and let it cool by placing in a colander. (fan with a paper plate) In a large skillet cook the bacon until crisp. Slice the bacon while frozen into thin ¼ slices before cooking. Reserve about 2 tablespoons of bacon grease in the pan. Slice the carrots thin and cut into pieces that are matchstick sized. Dice the onion, slice celery thinly. Cook the prepared vegetables in the bacon drippings until soft. Remove the vegetables and add chicken that has been diced into small pieces. You can add a little more bacon grease. Cook the chicken until done. Remove the chicken from the pan. Mix eggs , place a dab of butter in a pan. Pour a thin layer of the egg into the pan. When egg has cooked, flip. Repeat until all the eggs are cooked. Cool eggs and slice thinly into ribbons. Add cooled rice to the pan. Fold in the remaining ingredients and toss until combined. (add parsley, salt and pepper to taste) Warm on low heat for about 5 minutes. |

Notes: This is a time consuming dish. My Mom made it and it is was everyone's favorite dish. Takes time and patience to make. You can add shrimp and/or ham in place of the chicken or with.
