Directions:
Cook the rice and let it cool by placing in a colander. (fan with a paper plate) In a large skillet cook the bacon until crisp. Slice the bacon while frozen into thin ¼ slices before cooking. Reserve about 2 tablespoons of bacon grease in the pan. Slice the carrots thin and cut into pieces that are matchstick sized. Dice the onion, slice celery thinly. Cook the prepared vegetables in the bacon drippings until soft. Remove the vegetables and add chicken that has been diced into small pieces. You can add a little more bacon grease. Personal Notes:
This is a time consuming dish. My Mom made it and it is was everyone's favorite dish. Takes time and patience to make. You can add shrimp and/or ham in place of the chicken or with.
