1½ Cups All-Purpose Flour
1 Tsp. Baking Soda
1 Tsp. Ground Cinnamon
½ Tsp. Salt
½ Cup Butter (1 Stick) (room temperature)
½ Cup Shortening
1 Cup Brown Sugar (packed)
½ Cup Granulated Sugar
1 Tsp. Vanilla Extract
2 Eggs (room temperature)
3 Cups Oats (old fashioned)
1 Cup Raisins
1 Cup Walnuts (optional)

Directions:
Directions:
Preheat the oven to 350ºF. Put parchment paper on or use 2 ungreased baking sheets. Set aside.

In a medium bowl, combine flour, baking soda, cinnamon and salt. Set aside.

In a large bowl, beat butter, shortening and sugars until creamy. Add eggs and vanilla; beating well. Combine dry ingredients to wet ingredients until just combined.
Stir in oats, raisins and walnuts (optional).

Drop by rounded tablespoonfuls onto prepared sheet. Leave in rounded shape because cookies will flatten out. Use water to keep hands lightly moist; which makes working with batter easier.

Bake 10-12 minutes; rotating sheet ½ turn at halfway point in baking. Remove from oven when lightly golden brown. Let cool on sheet for 5 minutes, Then transfer to wire rack to cool completely. Store in airtight container.
