2 cups flour
2 tsp salt
3 egg yolks
1 egg
¼ - ½ cup water

Mix all together and knead for a few minutes....

Pinch off tennis ball size dough and roll out thin using a heavy rolling pin... then cut into strips ...

Dust with flour to keep them from sticking together and spread out on the counter to dry...

Add them in small amounts at a time to boiling, seasoned broth, stirring so they don't stick together... slow boil, stirring often until they don't taste doughy

We normally triple this recipe for our large family gatherings...

If you make more than you can use at the time, you can spread them out on a cookie sheet and place in the freezer for an hour... then bag them up in a freezer bag to be cooked later...

To make broth, you can boil a chicken seasoned with salt, pepper (the longer it boils, the better the broth tastes)... when the chicken is done, remove it, shred it, then return to the broth, then if needed add bouillon to the chicken stock to make it taste richer...

You can also omit the chicken and just use canned broth... it also needs bouillon added for flavor

A very small amount of Italian seasoning added to the broth is also good...
