Tomatoes; 3 hot house, 2 roman, 1 pack orange sweet
Basil-hand full
Bread
Olive oil
Pecorino Romano Cheese
Balsamic Vinegar
Garlic
Salt and pepper to taste

Take a large bowl, well not to large. Dice up tomatoes, I prefer smaller pieces to large. add to the bowl when cut up.
Chop up your handful of basil- I get mine from my garden. Add to bowl
Add a wooden spoon of chopped garlic- yep you read right.
2 tables spoons balsamic vinegar
I swirl of olive oil; that is going around the bowl once with you oil bottle.
Salt and pepper to taste

Mix by hand, now you can use a spoon but I feel that bruises the tomatoes and more juice squeezes out.
Cover with Plastic Seal and place in fridge- gonna wait 2 hours.

20 minutes before serving slice your bread, I use French baguette; slice into slices about 2 fingers thick. Now you can put them in the oven and toast or use a toaster.
Once toasted pour small amount of olive oil onto the toasted bread.
lay bread on platter- bring bruschetta out of fridge, stir up and place in several small bowls with serving spoons.
Take your block of cheese and grate enough for everyone and then a bit more cause I like heavy cheese.
Build yourself one to taste; bread, tomato mix, little cheese and enjoy.
