2 cups all-purpose flour
1 tsp baking powder
1 tsp salt
½ tsp baking soda
1 cup butter, softened
1 cup light brown sugar
1 cup granulated sugar
⅔ cup smooth peanut butter
2 tsp vanilla extract
2 large eggs
2 cups quick cooking oats
1 cup cocktail peanuts, roughly chopped
1 cup sweetened flaked coconut
12 oz. milk chocolate chips

Preheat oven to 350º. Line 2 cookie sheets with parchment paper. Sift flour, baking powder, salt and baking soda together. Set aside.

Cream together butter, brown sugar, granulated sugar, peanut butter and vanilla. Beat until smooth, fluffy, and light beige in color, about 3 minutes. Add one egg at a time, beating well after each addition. Add the dry ingredients. Beat for 1 minute.

Add the quick oats, peanuts, coconut and chocolate chips. The batter will be stiff.

Use an ice cream scoop to place cookies on the prepared cookie sheets. Place them 3 inches apart. Bake 16-18 minutes, until lightly golden. Cool on the cookie sheet for 5 minutes. Transfer to wire cooling rack.
