Ingredients: 1 and 1/2 cups all purpose flour (spoon and leveled) 1 teaspoon ground cinnamon (optional) 1 teaspoon baking soda 1 teaspoon salt 1 cup unsalted butter, softened to room temp 1 cup packed light or dark brown sugar 1/2 cup granulated sugar 2 large eggs, at room temperature 1 Tablespoon unsulfured or dark molasses 2 teaspoons pure vanilla extract 3 cups old fashioned whole rolled oats 1 and 3/4 cup semi-sweet chocolate chips

Directions:1. Whisk the flour, cinnamon, baking soda, and salt together in a medium bowl. Set aside.
2. In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter on medium-high speed until creamed, about 2 minutes. Add the eggs, molasses, and vanilla then beat on high till combined. Scape down sides of bowl and beat as needed to combine.
3. Add dry ingredients gradually from step 1 and mix on low until all combined. With mixer running on low speed, add oats and then chips.
4. Chill dough in fridge for 45 min to 1 hour. Dough will become quite hard.
5. Preheat oven to 350F. Line sheets of parchment on baking sheets. Set aside
6. Spoon 3 Tablespoons of dough per cookie onto sheets and place 4 inches apart. Bake 13-14 min or until lightly browned. The centers will look very soft.
Options:
When baking you can also add cranberries or walnuts. When they are cooling, press in a couple chocolate chips for looks. |
