6 medium potatoes
4 T. butter
chopped onion
4 T. flour
2 c. milk
1½ c. shredded cheddar cheese

Directions:
Directions:
Peel and cube potatoes. Boil until almost done. Or use thawed frozen hash brown potatoes.

Melt butter in pan. Add chopped onions and sauté until tender.

Add flour and blend well. Then add milk all at once. Blend the milk-flour mixture very well and cook just until it comes to a boil. Add cheese and remove from heat. Stir until cheese is melted and mixed in. Stir this into the potatoes in a baking dish.

If you like, you can add sour cream, chives, and bacon. Add salt and pepper to taste, and sprinkle parmesan cheese on top.

Bake at 350º for 30-40 minutes.
