4 cups water
1 teaspoon salt
1 cup uncooked quick-cooking grits
1 cup shredded Cheddar cheese
½ cup shredded Parmesan cheese
2 tablespoons butter
ground black pepper to taste

Directions:
Directions:
Bring water and salt to a boil in a saucepan. Whisk in grits, reduce heat to medium-low, and cook until thickened, 5 to 6 minutes. Remove from heat.

Stir in Cheddar cheese, Parmesan cheese, and butter until fully combined and cheeses have melted. Season with pepper and serve immediately.

This could've easily gone in "Baby, It's Cold Outside," but we had cheesy grits all year long. I'm giving credit to my great-grandma because my first (fading) memory of cheesy grits is from her kitchen, but mama made them and so did my grandmothers, aunties, and everybody else in the grits-making universe. I know some people like maple syrup or sugar in their grits, but my fam went savory with ours: crumbled strips of bacon, too much butter, and cheese, cheese, cheese. Breakfast is served!
