2 to 2 1/2 pounds flank steak
For Marinade:
3 tbsp. fresh lemon juice
1/2 c. vegetable oil
3 garlic cloves, minced and mashed to a paste with 1/2 tsp. salt
2 tsp. ground cumin
1/2 cup chopped fresh coriander
1/2 cup dry vermonth
1 tsp. freshly ground black pepper
Garnish: chopped fresh coriander

In a shallow ceramic or glass dish large enough to hold steak or in a large resealable plastic bag combine marinade ingredients and add steak, coating well. Marinate steak, covered or sealed in a bag and chilled, turning occasionally, at least 6 hours or overnight.

Prepare grill. Discard marinade and grill steak on an oiled rack set about 6 inches over glowing coals 5 minutes on each side for medium-rare. Transfer steak to a cutting board and holding a knife at a 45 degree angle slice it thin across grain. Garnish steak with coriander.
