1/4 cup shortening 1 cup sugar
1 egg 1 tsp. vanilla
1 cup mashed bananas 1 1/2 cups flour
1/2 tsp. baking soda
1/4 tsp. salt1 tsp. baking powder

Directions:

Cream shortening and sugar. Add egg and other ingredients.Mix well. Bake in a greased 8x8 pan at 350.

Buttercream Frosting:
4 tbsps. butter 2 cups confec. sugar
3-4 tbsps. milk 1 tsp. vanilla

This recipe was given to me by Christopher's babysitter's Mom-Meme. It's a great way to use up over ripe bananas. I usually use 3 bananas when I make it.
