1 c. shortening
2 c. sugar
2 tsp. vanilla
2 eggs
1 tsp. salt
4 tsp. baking powder
1 tsp. baking soda
1 c. milk

Filling:
2c. raisins, finely chopped
1 c. sugar
1 c. water
2 tbsp. flour
1\2 c. nuts (optional)

Dough:
Cream shortening and sugar. Add vanilla then eggs. Beat until fluffy. Measure dry ingredients in a separate bowl, mix together. Add to shortening mixture alternating with milk. Chill several hours.

Filling:
Cook filling ingredients on stovetop. Allow to cool before placing on cookie dough.

Roll dough out in small batches. Using a round cookie cutter (or a large canning jar ring) cut out circle matching number of tops and bottoms. Place one circle on cookie sheet. Mound filling in center. Top with other circle and crimp all around.

Bake at 400º for 10 -12 minutes.
