6 boneless, skinless chicken breasts
½ cup vinegar
½ cup brown sugar
¼ tsp ginger
1 tsp soya sauce
1 green pepper, chopped
½ cup cherries, cut up
19 oz can pineapple chunks (save the juice)
10 oz can mandarin oranges

Directions:
Directions:
Brown chicken in oil.

Add vinegar, brown sugar, ginger & soya sauce. Simmer 20 minutes.

Add green pepper, cherries, pineapple chunks and oranges. Simmer 3-4 minutes.

Thicken with pineapple juice & cornstarch (about 2 tbsp). Serve with rice.

Note: You can also batter the chicken before frying using ½ cup flour, 1 egg, & ¼ cup milk.
