Pie Crust*
1 1/2 C graham cracker crumbs
1/4 C sugar
1/2 tsp cinnamon
1/2 C butter, melted

* or, a premed graham cracker crust from the grocery store

Filling
14 oz can sweetened condensed milk
3 egg yolks
1/2 C fresh squeezed Key Lime** juice, or Nellie & Joe's bottled Key Lime juice

Whipped cream for serving and lime slices for garnish

** Key limes are small (smaller than a golf ball) and quite tart. They turn yellow when ripe. It will take 28 - 30 key limes to get that much juice. Strain the juice as it is squeezed to keep the tiny seeds out.

Preheat oven to 350ºCrust:
1. Combine graham cracker crumbs, sugar and cinnamon in a bowl and mix together until well combined.
2. Add melted butter and stir until the mixture resembles wet sand.
3. Press into a 9 inch pie pan and bake 6-8 minutes at 350º.
4. Remove from the oven and cool.

Filling:
1. Combined sweetened condensed milk and egg yolks in a large mixing bowl, blending until smooth with a whisk.
2. Add Key lime juice and whisk until smooth.
3. Pour filling into the pie crust and bake at 350º for 10 minutes.
4. Cool on wire rack for 1 hour.
5. Transfer to the refrigerator to chill at least 4 hours or overnight.
6. When serving, top with whipped cream and garnish with lime slices.
