4 Eggs
3 Cups peeled & cubed zucchini
½ Cup oil
1 cup Bisquick
1 small onion chopped or scallions or both
½ cup parmesan cheese ( I prefer pecorino)
½ teaspoon salt
½ teaspoon pepper

Directions:
Directions:
1. Beat eggs, add salt, pepper, oil, cheese, bisquick & zucchini
2. Spray 8" baking pan with nonstick cooking spray
3. Pour Mixture in pan
4. Bake at 350º for 40 minutes. Cool or serve slightly warm

You can double or triple this recipe for larger gatherings!
