4 Russet Potatoes
1 Onion
2 Cans Cream of Mushroom soup
Water or Milk (½ cup)
Shredded Colby Cheese

Preheat Oven to 350º
Precook potatoes in oven or microwave. Be sure to pierce each potato with a fork to prevent them from exploding!
Mix the 2 cans of cream of mushroom soup with the water or milk (your preference)
Slice onion into rings

Layer mushroom mixture on bottom
Layer potato rounds
Layer of onion rings
Layer mushroom mixture
When all layers are complete top with colby cheese

Cover with foil; Bake for 40 minutes. Remove the foil in last 10 minutes to allow bubbling of the cheese.

We have always associated this dish with Easter and the times we were at Grammy and Grampy's house. Over the years though I have made them when one of the two of you requested them. They go terrifically with ham but know that Kylee doesn't prefer to eat pork.

This past Easter when dad and I were visiting Kylee in Tuscon we made them for Easter dinner but paired them with a beautiful steak. We all made a toast to Gramps before digging into our first bite!!

They don't necessarily freeze well and because they are heavy in dairy they need to be eaten right away.
