3 cups heavy cream
1 cup whole milk
3/4 cup sugar
1 tablespoon pure vanilla extract
1/2 teaspoon kosher salt
6 large egg yolks
5 ounces chocolate wafers( if I can’t find wafers I use the Oreo cookies without the filling and then add two whole Oreos)

Whisk the cream, milk, sugar, vanilla and 1/2 teaspoon salt in a medium saucepan and bring to a simmer to 160º. Beat the egg yolks in a medium bowl. Slowly whisk 1 cup of the cream mixture into the egg yolks to temper them. Pour yolks into the cream mixture and continue to whisk until the mixture reaches 180º. and slightly coats the back of a wooden spoon. Transfer the mixture through a strainer into a bowl siting in an ice bath. When cool , place plastic wrap directly on the custard mixture to prevent a skin from forming. Remove from the ice bath and place in the refrigerator for at least 3 hours.
Place mixture into automatic ice cream maker for 15 minutes. Add crumbled wafers to the ice cream mixture and continue the process for an additional ten minutes. Put mixture into a container .
Freeze at least 2 to 3 hours .
