1 c butter
1/2 c sugar
3/4 c icing sugar
1 1/2 tsp vanilla
1/4 tsp salt
2 c flour

8 oz chewy caramels
2 tbsp plus 2 tsp heavy whipping cream
3/4 c milk chocolate chips
3/4 c chopped pecans

Directions:
Directions:
Preheat oven to 350ºF. Lightly grease a 9 inch square baking pan.
Cream butter, icing sugar, sugar, vanilla, and salt.
Sift flour then stir into creamed butter mixture.
Pat 2/3 of the shortbread dough into the pan and bake for about 12 minutes.
In the meantime, heat chewy caramels and heavy whipping cream together and whisk until smooth.
Remove shortbread from the oven and cover with caramel.
Sprinkle caramel with chocolate chips and half of pecans.
Cover with remaining cookie dough, flattened into small disks and overlapping each other slightly.
Sprinkle with remaining pecans then return to the oven until top cookie dough has started to brown very slightly, about 15-20 minutes.
Allow to cool so caramel sets before serving.
