Snickerdoodles


Ingredients:

1 c butter
2 c sugar
2 eggs
1 tbsp vanilla
1 3/4 c flour
3/4 tsp salt
1 tsp baking powder
1 tbsp cinnamon

(separate)
1 c sugar
1 rounded tbsp cinnamon

Directions:
Directions:
Preheat oven to 350ºF. Line 2 baking sheets with parchment paper.
Cream butter and sugar.
Add eggs and vanilla. Blend well, scraping down bowl in between.
Sift together dry ingredients, then stir into creamed butter mixture.
Using a cookie scoop to make sure dough amount is even, drop cookie dough into the palm of your hand, light roll into a ball, then roll in mixed sugar and cinnamon.
Place dough on lined cookie sheets and press the tops down slightly.
Bake until outside of cookies are just dry to the touch, about 10 minutes.
Cool before filling with chilled cheesecake and peach pie filling.
 

Peach Pie Filling


Ingredients:

3 c frozen chopped peaches
2/3 c sugar
1 tsp cinnamon
1 tbsp cornstarch
2 tsp lemon juice
1/4 tsp vanilla

Directions:

Mix all ingredients except vanilla and stir over medium heat until mixture has thickened. Remove from heat and stir in vanilla.
Cool completely in refrigerator before filling cookies.
 

Chilled Cheesecake


Ingredients:

2 8-oz cream cheese, cold
1/2 c heavy whipping cream
3/4 c icing sugar
1/2 tsp vanilla

Directions:
Directions:
Blend all ingredients together until completely smooth and thickened, about 4-5 minutes.
Chill in refrigerator until ready to use.

Pipe a ring of chilled cheesecake on one snickerdoodle then fill with peach pie filling and place second cookie on top, only pressing down very gently so filling does not squish out the sides.
Chill cookie sandwiches until ready to serve.
