Pre-heat oven to 350º

You will need:
(1) 1 lb box pasta such as ruffles, spiral, small shells or elbow macaroni
(1) 16 oz carton small curd cottage cheese
2 to 4 cups of your favorite grated cheese such as mozzarella or Colby Jack
1 to 2 lbs ground beef
1 medium to large onion
Green, optional
(3) 14 to 16 oz cans (or pints of home canned tomatoes) tomato sauce, diced or crushed tomatoes

Cook 1 lb of your favorite pasta according to the package

Brown down:
1 to 2 pounds ground beef, drain off excess fat
1 medium to large onion chopped

Add:
(3) 14 to 16 oz can tomatoes
1 tsp Italian seasonings
1/2 tsp garlic powder
1/2 tsp salt

Taste and add more seasonings to your taste.

Grease 9” x 13” baking pan.

Layer pasta, cottage cheese, meat sauce then cheese. Repeat ending with the grated cheese.

Bake 30 to 45 minutes until hot and bubbly. You may need to add a tent of foil so the cheese doesn’t get too brown.

Nancy adds a teaspoon of sugar to the acidity of the tomatoes.

This is a casserole Mom (Pauline Loud) started making and the grandkids and great grandkids tagged it “Grandma’s Casserole”. Mom used to make it with whatever cheese she might have on hand. Sometimes she made it with her home canned tomatoes, sometimes she didn’t.
