1¼ Cups of Sugar

⅛ Teaspoon of Salt

2 Cups Boiling Water

6 Tablespoons Corn Starch

Grated Rind of 1 Lemon

¼ Cup of Butter - Oleo

½ Cup of Lemon Juice

3 Egg Yolks

Standard Pastry Crust 9" - Baked

Directions:
Directions:
Mix the sugar, salt and cornstarch. Add water

and lemon rind. Heat on stove until thickened,

stirring & let simmer for 10 minutes. Gradually

stir in egg yolks mixed with the lemon juice.

Strain into baked pastry shell. Bake in preheated

oven at 400º for 10 minutes.
 

MERINGUE

6 Tablespoons of Sugar

1 Teaspoon of Lemon Juice

3 Eggs Whites

Directions:
Directions:
Beat egg whites with lemon juice until stiff.

Gradually add the sugar and beat until very

stiff. Pile lightly on pie and spread to the edge.

Bake in 325º oven for 18 minutes.
