Mango Squares Recipe

CRUST:
1 Cup butter
2 cups flour
1/2 cup macadamia nuts
2 T. sugar



First Layer:
8 oz. block of cream cheese
1 Cup sifted powdered sugar
9 oz. Cool whip. (I personally make my own by using whipping cream with 2 T. sugar) Whip with wisk attachment till firm).


MANGO TOP LAYER:
2 envelopes Knox Gelatin
1 Cup cold water
1 Cup boiling water
4 T. lemon juice
1 Cup sugar
5 Cups 1/2 inch cubes mango

CRUST:
Bake at 400º for 20-25 minutes
Let cool

FIRST LAYER:
Cream the powdered sugar and cream cheese, Mix in cool whip or whipping cream, mix well and put on top of cooled crust layer

MANGO TOP LAYER:
Sprinkle gelatin over cold water. Add boiling water, sugar, lemon juice and mix well.
Add mango to cooled gelatin. Chill in fridge till slightly firm (stir every 15 minutes)
Pour over cream cheese layer and refrigerate till firm.
Cut in 2 inch squares
Enjoy!
