6 10 or 12 inch tortillas
Extra Virgin Olive Oil
Cheese - monterey, chedder, swiss, mozzarella

Fillings:
Cooked finely chopped or shredded chicken
Carmelized onions - see Vegetable section
Cooked chopped shrimp or other seafood
Chopped Vegetables - tomatoes, peppers, etc
Cooked finely chopped beef

Preheat gas grill or oven to 350. If you cook them in the oven you will need a pizza stone.
Brush olive oil on 1 side of each tortilla.
On the dry side of the tortilla put your favorite fillings. Add cheese. Top with another tortilla, oil side up.
Place on hot grill for about 5 minutes or until desired brown color on bottom. Using a large spatula, gently turn the Quesadilla over. Repeat for browning.
Cut into 6 pieces.

Be sure to use plenty of cheese. This is the "glue" that holds the Quesadilla together. It will get very messy when you flip the tortilla if you dont use plenty of "glue".
