Ingredients: 1 small bagette Extra virgin olive oil 1 package pre-sliced panchetta cut into 1/4 -1/2 inch pieces Prepared basil pesto sauce Prepared roasted red peppers Creamy goat cheese

Directions: |
Directions:Preheat oven to 350. Slice bagette lengthwise in 1/2. Brush outside and bread sides with olive oil. Place in oven on pizza stone or right on the rack or on a cookie sheet until crispy. About 10 minutes. Coat a small frying pan with olive oil and fry the pancetta until very crispy. Remove from pan and place on paper towel to drain the oil. Remove bagette from the oven but leave the oven on. While the bagette is cooling, in a food processor or blender, blend the pesto and roasted red peppers until smooth. Drain through a sieve if there is too much liquid. Spread with goat cheese, then pesto-redpepper mixture, then top with the crispy pancetta. Return to the oven for about 10-15 minutes to warm through and the goat cheese melts. |
