Directions:Grease and flour pan. Preheat oven 350º for bread or 375º for muffins.
In a large mixing bowl, blend sugar and shortening until sugar is integrated well. In a separate bowl, blend eggs, then add to the sugar and shortening. Once you have dumped the egg out, use that same bowl to mash the bananas. Once the bananas are mashed well and jelly-like, add to the sugar, shortening and eggs. Mix together well.
In a separate mixing bowl, mix flour, salt, nuts and baking soda. Once well mixed, add to wet ingredients in the other mixing bowl.
Using a spatula, turn the flour mixture into the wet mixture until well blending. Blend by hand as a mixer will over mix the ingredients.
Options: Bake in 3 small loaf pans or 1 big loaf pan or in muffin pan. 350 degrees F for 45-50 mins - large loaf 350 degrees F for 25- 30 mins - small loaves 375 degrees F for 15-20 mins - muffins |

Notes: Grammy Peacock was my husband's grandmother. She loved through her cooking. All her children and grandchildren love her Chocolate Chip Brownies and her Banana Muffins. Early in my marriage, I visited her to learn how to cook her specialties. She was very meticulous in how she did her baking and at first, I thought all the steps unnecessary, but I have discovered through trial and error that it indeed makes a difference. So I now mix one egg at a time, I keep separate bowls for wet ingredients and dry ingredients. I blend my sugars (brown and white for CCB's) before adding other ingredients and remove the baked items with them looking as she directed.
