8 oz cream cheese at room temperature
1 cup mayonnaise
2 cups of fresh spinach (I used frozen)
1 can artichoke hearts chopped
8 oz shredded Cheddar cheese (or Pepper Jack mixed with Monterrey Jack)
6-12 oz chicken breast, cooked and cut up (also can use canned chicken)

Directions:

Preheat oven to 350º
Mix cream cheese and mayonnaise until smooth then add Cheddar cheese.
Add chicken, and salt & pepper to taste.
Bake in sprayed casserole dish for 30-40 minutes or until mixture bubbles.
Sprinkle additional cheese on top before serving with crackers or flatbread pieces.
