3 tbsp butter
2 onions sliced
2 eggs beaten
Non-stick spray
Mozzarella cheese - sliced, fresh or shredded

Directions:
Directions:
Carmelize the onions by melting 3 tbsp butter and adding the onions. Stir constantly until the onions are soft and brown but not crispy. They should be wilty.
Generously spray a clean medium size frying pan with non-stick spray. Place pan over medium heat and pour the eggs into pan. Move the pan around until the eggs cover the bottom and allow to set and cook through. Once set and cooked through, layer the carmelized onions and cheese on 1/2 of the omelet. Fold the other half over the filling.

The onions can be sweetened by adding granulated sugar to taste.
Serve with toasted bread, english muffin or bagel.
