7 OZ Almond Paste, Broken Up
1 Cup Butter, Room Temperature
1 Cup White Sugar
1/2 TSP Vanilla Extract
4 Eggs, Room Temperature and Separated
2 Cups All-Purpose Flour
6 Drops Red Food Coloring
6 Drops Green Food Coloring
1/4 Cup Seedless Red Raspberry Jam
1/4 Cup Apricot Jam
1 Cup Semi-Sweet Chocolate Chips, Melted

Directions:
Directions:
1. Preheat oven to 350º F. Line three (3) 9 X 13 inch baking pans with parchment paper. Set aside.
2. In a large bowl, add the broken Almond Paste, and cream together with the Butter, Sugar, Vanilla Extract and Egg Yolks. Once the mixture is fluffy and smooth, slowly add in the All-Purpose Flour to form a dough.
3. In a smaller bowl, beat the Egg Whites until soft peaks form. Fold Egg Whites into the Dough.
4. Divide the Dough into three (3) equal portions. Mix one (1) portion with the Red Food Coloring and one (1) with the Green Food Coloring. Spread each portion into one (1) of the prepared baking pans.
5. Bake 10 to 12 minutes, until lightly brown. Carefully remove cakes from pans and parchment paper and allow to cool completely on wire racks.
6. Place the Green Layer onto a piece of plastic wrap large enough to wrap all three (3) layers. Spread Green Layer with Raspberry Jam, and top with the uncolored layer. Spread with Apricot Jam and top with red (pink) layer.
7. Transfer layers to baking sheet and wrap all three (3) layers with plastic wrap. Place a heavy pan or cutting board on top of wrapped layers to compress. Chill in the refrigerator for eight (8) hours or overnight.
8. Remove plastic wrap. Top with melted chocolate and refrigerate for 1 hour, or until chocolate is firm. Slice into squares as desired.

You can use any flavor or flavors of jelly or jam that you prefer. I have used all strawberry or all raspberry. You can use marzipan as a layer as well to give it more of an Almond flavoring.....the choice is yours and let your imagination go wild. Hope you enjoy!!!!
