3/4 cup self-rising cornmeal
3/4 cup self-rising flour
1/3 cup milk
1 egg
1/2 cup chopped onion
1 chopped jalapeno, deveined and seeds removed

Directions:
Directions:
Stir together flour, cornmeal, and milk. Add egg, stir, then add onion and jalapeno. If it's too thick, add a little more milk, if too thin, add a little more cornmeal. Heat oil in deep boiler to 350 degrees. Drop mixture by golf-ball sized spoonfuls into hot oil. They will flip over as they cook. Once browned on all sides remove and drain on paper towels or a cooling rack.
