1.5 lbs. lean ground beef (1.5 packages)
1 medium onion, chopped fine
1 28oz. can diced tomatoes
2 cups water
3 small cans beef consommé soup
4 carrots, chopped fine
1 bay leaf
3 stalks celery, chopped fine
1/2 tsp. dried thyme
1/2 cup pearl barley (uncooked)
fresh parsley, salt & pepper to taste

Directions:
Directions:
Brown meat and drain off fat.
Add chopped onion to the pan and sauté about 3 minutes until soft.
Combine all ingredients in a large dutch oven or crock pot and simmer on low for 2 hours minimum.
If using a crock pot leave on low all day.

Notes:
Add frozen corn kernels just before serving for colour.
Add 1 envelope French Onion Soup mix if desired.

Additional Info:
Can be made Italian style by adding dried oregano, basil and chilli flakes, 4 chopped fresh garlic cloves, chopped fresh zucchini, 1 cup spinach, and 1/2 cup broken dried spaghetti noodles (instead of barley).

She made this soup often and was very much enjoyed when he was little. It was easy to consume by young ones. Keeps well in the freezer.
