1 c. Almond/Cassava Flour
3 tbsp. Coconut Flour
1/2 tsp. Baking Soda
1/4 tsp. Salt
1/4 c. Coconut Oil, Softened
1/4 c. Peanut Butter
1/2 c. Coconut Sugar/Brown Sugar
2 tsp. Vanilla Extract
1 Egg
1/2 c. Chocolate Chips

Directions:
Directions:
1. Preheat oven to 350º F and line two pans with parchment paper.

2. In a small mixing bowl, whisk almond/cassava flour, coconut flour, baking soda, and salt until well combined.

3. In a large mixing bowl, add your coconut oil, peanut butter and sugar and beat for 1 minute with a hand mixer. Add your vanilla and egg blend until combined.

4. Pour dry ingredients into wet ingredients and stir together until fully combined. Fold in chocolate chips.

5. Scoop cookie dough onto prepared pan, evenly spacing them apart with no more than 12 cookies per sheet.

6. Bake in the oven for 10-12 minutes, or till the edges have set and the cookies are lightly browning.

7. Let them cool on the pan.
