2 whole chicken breasts, cut into bite-sized
pieces
1/2 cup olive oil
3-4 cloves of garlic, minced
Generous grinding of black pepper
dash of cayenne pepper +/or 1 tsp. italian
herbs
Bread crumbs

Directions:
Directions:
In a bowl, marinate chicken pieces in oil,
garlic and black pepper about 30 minutes.
Pour off marinade.
In a shallow bowl, mix bread crumbs,
cayenne pepper and Italian herbs. Dredge
chicken pieces in bread crumb mixture. Shake
to remove excess. Spread nuggets in single
layer on cookie sheet.
Bake at 475 for 15 minutes, turning once.
